Consequently, the types of foods highland Ethiopians consume and the manner in which food is prepared is in accordance to ecclesiastical laws. Vegetarian dishes are a must for Ethiopia's Christian Orthodox population which respects nearly 200 fasting, lent, days a year. Ethiopian Orthodox Christian fasts forbid the consumption of any animal protein, such as chicken, beef, and dairy products. Vegetarians and vegans alike would be glad to know that the Ethiopian religious dietary observance has brought about an endless array of vegetarian dishes. Fish, which is the only animal protein allowed during fasting, occasionally accompanies the lent dishes.
